Gluten free cooking is about precision. We strongly recommend using the ingredients and tools listed below. We use them in our own cooking and we know they produce the best results.
Please use a small digital scale to weigh your ingredients to the exact measurement. The scale and time to measure are very worth the investment!
Yield: 8 fried mozzarella sticks
Feel free to halve the recipe or multiply it as many times as you wish!
Put a sheet of parchment paper in a baking pan that is large enough for 8 mozzarella sticks and small enough to fit in your freezer and put that to the side.
Take out 8 sticks of mozzarella cheese and put them to the side, too.
Put out three medium sized bowls. They need to be larger that the length of a mozzarella stick.
In the first bowl, put in 3 oz of brown rice flour.
In the second bowl, put in 2 eggs and 2 tablespoons of milk and stir until blended.
In the third bowl, put in 5 oz of brown rice flour, 2 tablespoons of Italian seasoning, 1 teaspoon of garlic powder and 1/2 teaspoon of salt and mix until blended.
Take one stick of cheese and dredge it in the first bowl of plain flour until it is completely covered with the flour.
Then, roll the cheese stick in egg mixture in the second bowl until it is completely covered with the mixture.
Take that cheese stick and dredge it in the Italian seasoned flour mixture in the third bowl until it is completely covered.
Then, go back to the egg mixture and roll the cheese stick in the egg mixture a second time until it is completely covered.
Finally, return to the bowl with the Italian seasoned flour mixture and dredge it until it is completely covered.
Put the cheese stick on the parchment paper in the pan and repeat the process with all of the other cheese sticks so they all are coated.
Put the pan in the freezer until the coated cheese sticks are completely frozen which should be about three hours.
Heat up the oil in your home fryer to 365 degrees. We recommend canola oil, but feel free to use vegetable oil.
Remove the pan of frozen mozzarella sticks from the freezer and place on your counter.
Put four cheese sticks in your fryer basket and lower the basket into the oil.
Fry the cheese sticks for 1 minute and 45 seconds. If you do more, the cheese will begin to escape from its coating.
Raise the basket and use tongs to remove the fried sticks. Put them on paper towels to drain. Once they are cool enough to pick up, but still warm enough to be gooey, place them on a plate and serve with your favorite dipping sauce!
